Served with sambal matah, Sate Lilit Bumbu Bali is suitable for lunch and dinner at home.
Ingredients Sate Lilit Balinese Seasoning
200 g of mackerel meat
50 g of peeled shrimp
50 g of grated coconut, roasted
10 stalks of whole lemongrass
Ground spices:
4 red onions
3 cloves of garlic
3 large red chilies
2 red bird's eye chilies
3 candlenuts, roasted
1 tsp shrimp paste, grilled
3 cm turmeric, grilled
5 tbsp cooking oil
Dry Spices:
3 sticks of lemongrass, bruised
4 pieces of lime leaves
1 bay leaf
1 cm galangal, bruised
¼ tsp tamarind water
½ tsp brown sugar
½ tsp pepper
1 tsp salt

How to Make Sate Lilit Balinese Seasoning:
1. In a food processor, puree the mackerel, shrimp and grated coconut. Transfer into a container, set aside.
2. Sauté the ground spices until fragrant. Add lemon grass, lime leaves, bay leaves, galangal, tamarind, palm sugar, salt and pepper. Sauté again until fragrant.
3. Mix the ground spices with the fish mixture. Then wrap the dough on the lemon grass.
4. Grill the sate lilit until cooked. Serve with rice and sambal matah.
