Grapefruit Shrimp Salad

Ingredients for Pomelo Shrimp Salad


500 g of grapefruit pulp, coarsely shredded


350 g prawns, peeled, deveined and cleaned


Sauce:


1½ tbsp fish sauce / nampla


2 tbsp lime juice


2 tsp sugar


1 tbsp thai sweet chili sauce


100 g roasted coconut, puree


5 red onions, thinly sliced


7 green cayenne peppers, whole


10 g coriander leaves, roughly chopped


Sprinkled:


1 tbsp grated coconut toasted


How to Make Pomegranate Shrimp Salad


1. Boil the shrimp for 2 minutes in boiling water, remove, drain. set aside.

3. Mix all the seasoning ingredients, stir until smooth.


4. In a large bowl, mix together the grapefruit, prawns, shallots, cayenne pepper, cilantro, and sauce and stir to combine.


5. Transfer to a serving plate, sprinkle with toasted coconut.
