Bali also has a rujak recipe that is no less delicious than other rujak. Its name is Rujak Kuah Pindang which is spicy, fresh and sweet in taste.
Recipe for Rujak Kuah Pindang
800 ml of water
4 stalks of lemongrass, bruised
2 bay leaves
2 cm galangal, bruised
1 tsp salt
350 g boiled fish, cut into 2 cm cubes
Seasoning, Puree:
300 g of brown sugar
7 red chilies
1 tsp grilled shrimp paste
1 tsp salt
3 tbsp concentrated tamarind water
Fruit, Slice 0.5 Cm Thick:
250 g jicama, peeled
250 g of kedondong
250 g of red guava
250 g young mango
250 g of pineapple
How to make Rujak Kuah Pindang:
1. Gravy: Boil water, lemon grass, bay leaves, galangal and ground spices, cook until the sauce is slightly reduced, remove the lemon grass, bay leaves and galangal. Add pindang fish and cook until cooked. Lift.
2. In a bowl, add the chopped fruit and mix well.
3. Put the fruit pieces in a serving bowl. Pour the pindang sauce, serve warm.
